Perfect for when you need something in a hurry

German Potato Pancakes

Makes Four Servings

6 Large Potato’s- grated and drain ½ of liquid

1 ½ T. Flour

¼ tsp. Baking Powder

1 ½ tsp. Salt

1 Medium Grated Onion

2 Large Eggs-beaten

Mix all of the above ingredients. Drop by Tablespoonfuls into frying pan with ¼ inch cooking oil. Fry until golden brown on each side. This makes about 8 - 4inch pancakes. Serve with applesauce over the top or rolled up with applesauce in the middle and a little powdered sugar sprinkled over the top. These turn out the best when you use a cast iron frying pan.

 

Veggie Pizza

1 package of crescent rolls

1 cup sour cream

½ cup of mayonnaise

1 package dry Hidden Valley Ranch Dip Mix

½ cup cauliflower-broken in small bite size pieces

½ cup broccoli-broken in small bite size pieces

½ cup grated carrots

½ cup Shredded Cheddar Cheese

Spread out the crescent rolls on a cookie sheet to form a crust. Roll crescent rolls so that it is one solid piece. Bake for 10 minutes or until slightly brown at 350 degrees. Remove from oven and let cool. Meanwhile, Mix sour cream, mayonnaise and the Hidden Valley dry dip mix and spread over the cool crust. Mix the vegetables together in a bowl and pour this over the sour cream mixture. Top with ½ cup shredded cheddar cheese. Put in the refrigerator until time to eat. It is best when it is a little cool. Cut into squares and serve.

 

Hamburger/Bean Casserole  (The Kids Love This One)

1 1/2 cup  Macaroni- cooked

1-  28oz. can of Bushes Baked Beans (any flavoring)

1-  10 3/4oz. can campbells tomato soup

Cook the macaroni, add the beans and the tomato soup and simmer for 15 minutes

ROOT BEER CAKE

2 cups flour
2 cups sugar
1 cup RootBeer
2 sticks of margarine
1/2 cup milk
1 tsp. baking soda
1 tsp. vanilla
1/2 tsp. salt
2 eggs
1 1/2 cups of miniature marshmallows (optional)

Mix flour and sugar together.
In a saucepan; combine Rootbeer and margarine, stir until margarine is melted
Take off of burner and Add  milk, baking soda, vanilla,salt and eggs.
Blend well and pour into flour and sugar mixture and mix well.
Bake in a 9x12 pan at 325 degrees for 30 minutes.

Top off with the Famous RootBeer Frosting

1/4 cup margarine
1/8 tsp. salt
2 cups confectioners sugar
4 Tablespoons milk
1 tsp. rootbeer extract or 1 Tablespoon rootbeer soda

Mix the margarine and butter together and whip with an electric beater until fluffy.
Add sugar and milk (add a little at a time until spreading consistency)
and mix completely.
Add the vanilla and stir by hand until mixed.
Frost cake and eat!!
